Marble cake: squash, dark chocolate & chestnut (gluten free)

Gluten and lactose free recipe !


  • 500g chestnut squash (or butternut squash)
  • 100g rice four (you can also use wheat flour is you are not intolerant)
  • 50g chestnut flour
  • 2 eggs
  • 70g coconut sugar (this recipe is slightly sweet, you can add more sugar and any other sweetener)
  • 50g coconut oil
  • 50ml plant milk
  • 100g dark chocolate (70% at least)
  • 10g (gluten free) baking powder 
  • 1 teaspoon vanilla


1. Weigh 500g of squash with its skin (clean it well !), cook it in boiled water for 20minutes. The flesh must be very soft. When cooked, peel and mash it.

2. Preheat the oven to 180°C (or 350°F).

3. In a bowl, mix together flours, sugar and making powder.

4. Add eggs and mashed squash and stir.

5. Add coconut oil, plant milk and vanilla before stiring again. 

6. Separate the batter in two parts. Melt dark chocolate and add it to one of the batter. 

7. Grease (with coconut oil) and flour a rectangular pan and pour making differents layers of batter.
Put in the oven for 35-45 minutes. The cake won't be completely cooked inside, it will be gooey and moist ! Let it cool before eating :)
